ChefOsamu Ueno: A master of Naniwa Kappo cuisine through French cuisine
Born in Osaka Prefecture in 1961. Second generation owner of Naniwa Kappo Kigawa. Having grown up watching his father, he naturally aspired to become a chef. He joined the restaurant at the age of 19, but trained at the famous French cuisine restaurant La Mer for about five years to gain a broader perspective. When he returned to the restaurant, he was initially confused by the difference between Japanese-style meal and French cuisine environments, but overcame this. In 1994, he officially took over the restaurant, and his unique Naniwa Kappo cuisine, which incorporates French cuisine techniques, has earned him a reputation. He is currently also focusing on training the next generation, and has trained many excellent apprentices.

At Naniwa Kappo Kigawa, you can enjoy a variety of exquisite dishes that perfectly blend respect for tradition with the quest for new flavors. As the restaurant is located close to the sea, many regular customers visit in search of fresh seafood. One of the most representative dishes is the "Sorezore Aji Warisen." The gorgeously presented sashimi is seasoned with a sauce that matches the type of seafood, and can be enjoyed with sake, wine, or champagne. It is a unique dish that can only be found at Kigawa, which combines French cuisine ideas and techniques with Naniwa Kappo.

Hozenji Yokocho retains an old-fashioned atmosphere. As you walk down the cobblestone road, you will come across a particularly stately noren curtain swaying in the breeze. The restaurant has counter seating on the first floor. There are private rooms on the second and third floors, both of which are calm and relaxing spaces. It is widely used for entertaining and celebrations. From the counter seats, you can see most of the kitchen, allowing you to enjoy watching the chefs at work up close. The chefs also gauge the timing of serving the next dish based on the customers' expressions and conversations. Such consideration is unique to a famous Kappo restaurant.
