阪神 なんば線 大阪難波駅 から徒歩5分。
利兵衛横丁という狭い裏路地にある小さな焼鳥屋さんです。
店内はカウンター席が10席ほどで、落ち着いた雰囲気のお店。
鶏肉はブロイラーを使わずに上質な地鶏や軍鶏を。
さらに、半世紀以上継ぎ足しで使われていて、醤油とお酒でつくられたシンプルながらも秘伝のタレ。
焼きは最高級紀州備長炭と、随所にこだわりが詰まった焼き鳥を堪能できるお店です。
知り合いから勧められて、フラリと寄らせてもらいました。
この日はたまたま空席がありましたが、日やタイミングによっては予約が無いと入れない事もあるそうなんで、予約をしてから伺うのがベターです。
焼き鳥は単品と2種のコースを用意されていますが、コースの方がお得な料金設定になっているそうです。
予備知識無しで伺ったもんで、おススメの松コースをいただく事にしました。
♦松コース 5,500円（税込）
●温泉卵
●鶏ささみ 山かけ
ささみの刺しに山かけ・刻み海苔・わさび
あっさりした出汁にわさびがほんのり。
鳥の味を楽しめます。
●しんぞう・・コリっとした歯応えがありながらも柔らかいお肉。
●わかどり・・プリップリの肉質とあっさりタレのハーモニー。
●かわ・・炭の風味と鶏の脂の旨味。
●さんかく・・小さい骨付きのお肉ですが、そのまま食べれます。
●まる軟骨・・本来は肝らしいですが、品切れの為に代品として。コリコリであっさりしてます。
●けんじょう軟骨・・大きな身付きで食べ応え有り。
●親鳥・・硬さはありますが、噛めば噛むほど味が出ます。タレの味から鶏の旨味への変化を楽しめます。
●味鳥焼き・・オリジナルのつくね。シャキシャキとした食感は玉ねぎ入りかな？さっぱりした味で美味しいです。
●軍鶏ねぎ・・大きな身に大きなネギ。ちょっとパサっとした感じがありました。
●アスパラ巻き・・かなり大きなアスパラにプリプリのせせりが巻かれています。噛んでも巻いてる身が外れないのが不思議でした。
●味鳥巻き・・こちらはごぼうに巻かれています。タレとホクホクで柔らかいごぼうのが美味しかったです。
●チューリップ・・プルンプルンで脂がよく乗ってるのが分かります。
●陣笠・・しいたけに鶏身を詰めてあります。ゆずを練り込んであり、鶏の旨みと柑橘の清涼感が合わさってさっぱりした後口に。コースの〆なだけありますね。
♦ど辛（日本酒・冷）
口に含んだ瞬間は軽く甘さを感じます。
飲み込むと舌の上に広がるキレのある辛さ。
飲みやすいさっぱりとした後口で、食中酒にとても良かったです。
どの焼き物も火の通し方が抜群でした。
タレはあっさり、塩も少なめで鶏の旨味を活かす調理をされていて、どの串も美味しかったです。
