九州料理の割烹・博多廊に来ました。
半個室でゆっくり食事が楽しめます。
和装美人の店員さんが給仕係です。
大分・四ッ谷酒造・麦焼酎・兼八を飲みます。
博多名物の酢もつです。
豚の胃の千切りを酢で味付けしています。
ラーメンサラダです。
細ストレートの博多とんこつラーメンの麺が入ったサラダ仕立てになってます。
豚の角煮はプルプルに柔らかく煮込まれています。
チキン南蛮です。
甘酢とタルタルの味付けで食べます。
鶏の水炊きです。
スープは丸鶏を煮出したスープで真っ白に白濁しています。
最初にスープの味見をします。
骨付き鶏の旨味が溶けだしています。
骨付きの鶏が煮えました。
しっかりとした歯ごたえで肉の旨味が味わえます。
ここまですべての工程を和装美人の店員さんに仕上げてもらえるので鍋奉行の出番はありません。
美しい仕上がりです。
つくねは軟骨入りでコリコリした軟骨の食応えが素晴らしいです。
大きくカットしたネギ、薬味の柚子胡椒、一味唐辛子などがすべてがいい仕事をしています。
満腹に近い状態ですが、鶏の旨味たっぷりの雑炊は食べられますね。
デザートの栗アイスクリームは粗く砕いた栗がごろごろ入ってます。
栗の味が濃厚で美味しかったです。
