Our chef is a talented person who also served as Japanese Cuisine at Hotel Granvia. Please enjoy our proud hot pot dishes, which are made with a focus on dashi. Our recommendation is the "Chanko nabe" which features a double soup made from chicken bones and bonito dashi. Instead of soy sauce or miso, you can enjoy the deep flavor of the dashi made from various ingredients along with a wide variety of toppings. The chef himself carefully selects seasonal ingredients, including large clams from Chiba Prefecture.
