The amount of water added and kneading time are fine-tuned every day, and the dough is kneaded with homemade oil.The dough is made using an original blend of all-purpose flour, brown rice flour, and mochi flour, and is a product we are proud of after much trial and error! The homemade bean paste is made with an exquisite balance of minced pork parts (4 types), and is made with Chinese cabbage and cabbage instead of chives and garlic. It has a chewy and delicate texture that is unique to raw Gyoza / Dumpling, and has enough flavor even without dipping it in sauce, making it perfect with alcohol and white rice! ☆You can also take it home☆
