2年ぶりの千里 グルメ友達から誘われたのでプチ遠征。
富裕層の人達から人気を得る四季匠さん。
高級感のあるお店でカウンターに座り 目の前でスタッフの方が炭火でじっくり焼いてくれるスタイル。
いいですね～。
京都丹波黒鶏と奈良大和肉鶏の食べ比べをはじめ 牛や鮮魚、野菜の仕入れにまでこだわってるようです。
先ずは朝引きの新鮮なお造りから。
ずり、肝、はつ、ささみ、もも、ムネ肉です。 ももとムネ肉は大和肉鶏と丹波黒鳥の食べ比べ 同じ部位でも見た目からして違いました。大和肉鶏は赤みを帯びてます。 食感、うま味も違いました。 好みは奈良の方でした。
同時にサラダももってきていただきました。 中島農園の新鮮な野菜はとレモンドレッシングとにんじんドレッシングで
野菜が美味しいので バーニャカウダーも追加。うまいなー。ﾊﾞｸﾊﾞｸいってまう。
珍しいのが地鶏のミンチカツ 生タルタルソースがかなり良い仕事してる。 鶏肉のミンチはパサパサの印象あるんですが。聞くと脂や尻の部位などもＭＩＸしてるんでかなりジューシーでした。
お次は 大和肉鶏のももタタキ、大和肉鶏むねタタキ 香ばしいし柔らかいし肉の甘味がよくわかりました。
ここからの焼きはいよいよ目の前で焼いてくれます。 炭との距離は近いけどパチパチいうたり、跳ねたりしないし良い炭なんだなって感じました。 もも、むね、手羽先、厚皮、せせり、やげん 、ずり、はつ 脂が多いと煙が上がりますが、換気も良くできており匂いもつかない。 流石プロ。焼き加減も抜群でした。
鶏尽くしだったから牛肉の炭焼きを頼みました。 堪能した部位は 牛タン、牛ハラミ 牛タンは肉厚もあり霜ふってるしめちゃうま。
〆に釜飯を4人できたので2種いきました。 鮭の釜飯 脂がのってて美味い〜 しじみの釜飯 普通に食べた後は、しじみの濃厚出汁をかけて
女性はここでダウン。
僕は3品追加 唐揚げ 下味が好み。ジューシー
生つくね 中々これを提供できる店ないしうれしいですね。ねっとり美味しい。
チキン南蛮 今後展開予定の新メニューを特別にだしてもらいました。 タルタルがやはり美味い。
これだけ食べても1万行かないのもうれしい。 駐車場もあるし便利ですね。
