Traditionally Samgyetang uses a whole baby bird, but Hojae uses chicken thighs, which are easier to eat. It was simmered so slowly that you could break it up with a spoon and eat it. The soup is full of nutrients and tonics such as ginseng, dates, ginkgo nuts, and chestnuts. It also contains 150-200g of chicken, so it's also rich in protein!
