佐賀というと、県民の方には誠に申し訳ないが、とても存在感が薄い。吉野ヶ里遺跡や伊万里などは佐賀だと頭で分かっていても、佐賀県という地方自治体の存在は、なかなか思い出しにくいものがあります。
旅行でも福岡や熊本、長崎などはそれぞれに個性の富んだ料理や名物がありますが、佐賀というと、海苔やムツゴロウぐらいしか思いつきませんし、ムツゴロウも果たして食べられるものなのかどうか、そんなこともあやふやな理解しかございませんでした。
ところが、この店が供する料理には、とても明確な佐賀像があり、佐賀いうものを土地と料理を通して理解する上で明確なガイドラインを示してくれるものでした。私からすれば、コロンブス的な発見というべきでしょうか。
印象に残った料理は「ガン漬け豆腐」。ガン漬けとは海岸に一般的にいる小蟹を塩辛にしたもので、歯ごたえと蟹の旨味が溶け込んだ独特な味わい。佐賀名物としてこの地で出会わなければ知ることのなかった味わい。
これがまた、佐賀の地酒「万代」純米酒のしっとりと重々しく、濡れコクのある酒に非常にマッチする。
ふうむ。
難点としては、刺身は単品では頼めず、盛り合わせのみとのこと。呼子のイカや、アイナメなど、ぜひそのままで食べたいのですが、仕入れの問題でしょうか。
