約１０分程で到着しました。見た目は泡立っていていかにも濃厚そうです。
まずはスープを頂くと、ザラザラとした飲み口で骨髄を相当煮込んであります。
乳化されたクリーミーな味わいで脂っぽくなくくどみがなく、意外とサッパリとした味わいになっています。ただ背脂などを使用せず骨髄のみなので少し旨みに欠ける感じはあります。
逆に言えば骨髄だけでここまでトロトロ濃厚なスープが作れるんですね。
その日の仕込みの状態にもよると思いますが、獣臭さはそこそこあります。
食べた後丼底には骨粉が沈殿します。久留米ラーメンとも佐賀ラーメンとも言えない独自のラーメンですね。チャーシューは厚みがあってジューシーで美味しいです。醤油ベースの味付けですね。麺は中太のかん水の効いた麺です。少しちゃんぽんの麺のようですね。
背脂などを使った脂っぽいラーメンではなく、骨髄のみでここまでまろやかでクリーミーな味を出せることに驚きました。背脂の濃さとは違う豚骨そのものの味わいです。
ド濃厚豚骨ラーメンが好きな私にも納得のいくお味でした。ごちそうさまでした！
