創業30年目建て直しました。
現在当店のスープは丁寧にアクを取り除き、豚骨を高火力で炊き骨の崩れ具合や色、香りを感じて新しいスープに継ぎ足しています。
骨の出し入れ継ぎ足しで取った熟成スープです。
魚介系煮干スープは複数の乾物や野菜などを静かに煮出し、豚骨スープ3割と合わせています。
またチャーシューと背脂は火力を抑え優しく煮込んで柔らかく仕上げ、背脂に関しては無駄な脂を煮溶かした白い部分だけを使用ます。
