The signature menu item, yakiton, uses pork that has just arrived and processed that morning, purchased from the Kenboku Meat Center in nearby Kumagaya. Thanks to the advantageous location, the food is delivered to the store one tempo faster than being delivered to Tokyo, so the freshness is different! We skewer these pieces one by one in the store and slowly grill them over charcoal while still fresh.
