Red vinegar, which is made from sake lees, takes longer to ferment and mature than the rice vinegar commonly used for sushi rice, resulting in a mellow acidity, pleasant aroma, and elegant taste. Red shari has a mellow taste and goes perfectly with a variety of toppings. Please enjoy the exquisite sushi made with fresh fish purchased daily and carefully selected red rice.
