For the smoked food menu, instead of the usual salt and herbs, we use miso, soy sauce, and other ingredients to season the food. We are particular about the chips we use, such as hickory chips for a fragrant finish and apple chips for a sweet taste.In addition to Japanese tea, we blend several types of ingredients, such as adding "zarame" to bring out a strong sweetness, to create an original smoked menu.
