Fukunaga Meat Dishes is a 10-minute walk from JR Moriyama Station. I'm off to Shiga to try the delicious Omi Beef Dishes prepared by Chef Fukunaga, whose family runs a dairy farm. Diners, including myself, seem to be shying away from the so-called A5-ranked high-grade meat with plenty of marbling, and are shifting preferences to leaner meat. On the other hand, producers, in order to increase the value of branded beef, are particular about the amount of marbling and make improvements, aiming for high-quality meat with reduced fat that doesn't cause heartburn. Rather than abandoning the brand and choosing to deal in lean beef with a lot of lean meat, their priority is to create branded beef with beautiful marbling and gentle fat. It's true that high-grade meat with marbling is clearly tastier for dishes like Sukiyaki and shabu shabu. The Omi beef that Chef Fukunaga handles, including heart, outer thigh, rump, hanging tenderloin, lamb sinew, innards, and Hamburg, has a gentle fat that is just to my liking...
