黒壁スクエアはJR北陸本線の長浜駅近の長浜市旧市街で、歴史的建造物が残っていて、現在は観光スポットになっている。
この店は黒壁スクエア内にあるので、駐車場はない。
店内は縦長で、右は電動石臼が二台置かれた蕎麦打ち部屋とそれに続く調理場とカウンター、反対側に椅子席が配置されている。
蕎麦は一種類で、張り紙に只今のそば粉は丸岡産、伊吹産、越前産と書かれていた。
天せいろと焼鯖ずしを注文した。
注文の時点で、辛汁は関東風の濃厚な辛口と関西風の甘口が選択できるので、後者にした。
蕎麦は切り幅とのし幅がいくらか異なり、水切りはあまり良くない。
切りむらや端切れは目立たないが、腰はあまりない。
蕎麦の味と香りはあるが十分とは言えない。
薬味はネギとわさびでわさびは良くない。
辛汁は甘口。
蕎麦湯はとろっとタイプだが、風味は乏しい。
蕎麦打ちはあまり感心できないし、焼鯖ずしも驚くほどのものではなかった。
福井と滋賀県の在来種をブレンドして、品質を安定させていると書かれていたが、あまり高品質というわけにはいかないようだ。
