出雲での夕食は出雲駅そばの「久鶴」です。相方が探しました。「久鶴」に予約の際に「何食べたいですか？」と聞かれていたので「のどぐろ」をリクエストしておきましたら大振りののどぐろの塩焼きです。
正直言ってのどぐろはお刺身か干物食べたかったのですが、大将は塩焼き４０年以上のの職人さんで最高の焼き加減でした。
絶妙の焼き加減ののどぐろは塩の振り加減も素晴らしく魚の味を最大限に引き出すものでした。自分の魚の好きな部位はハラスと頭、特に目玉。その目玉がぷりぷりに焼けてなんとも言えない味です。頭も半分くらい食べたところで、頭と骨は残しておいてねと女将さん。少量の醤油を降ってお吸い物にするとのこと。ほぼ骨しかないのどぐろでしたがなんとかお吸い物になって２度おいしいです。大将の客では北海道からの客で「以前骨までバリバリ食べた客がいたけど、お客さんもそうだね。北海道の人は背骨も食べるんだね」と笑っていました。
お酒は「旭日」出雲のお酒です。って近所に酒蔵があるそうです。
お刺身が「アカヤガラ」と「サヨリ」北海道にはなじみのないおさかなです。一品一品丁寧な仕事で大変美味しくいただけました。
