This is an affiliated store of Chimney Co., Ltd., which operates a chain of multiple Izakaya (Japanese-style bar) restaurants across Japan, including Hanano Mai and Sakana Dojo. Inside the restaurant, there are semi-private table seats separated by partitions and tatami rooms with sunken kotatsu tables for groups. A large Izakaya (Japanese-style bar) with over 100 seats. Although it is a chain Izakaya (Japanese-style bar), the menu is handwritten and changes daily, and it also features locally sourced seasonal ingredients. On this day, Hamada's white squid (Kensaki squid) was the recommended menu item, so I ordered that first. It's a pretty impressive-sized Kensaki squid. Although it is not live squid, it is extremely fresh and the pigment around the eyes really stands out. The squid's meat is carefully cut with a knife in the opposite direction to the fibers, so it's thick but soft, and you can enjoy the crunchy texture in the center. The more you chew, the more you can taste the elegant sweetness typical of Kensaki squid. There are two types of condiments: wasabi and ginger, and there are two types of soy sauce on the table: local sweet and thick saishikomi soy sauce and regular sashimi soy sauce. I had the sweet soy sauce with wasabi, and the regular sashimi soy sauce with ginger. Both go perfectly with the squid sashimi and it's hard to choose between them. Uchiwa shrimp is a common ingredient in the Kansai region, but rarely seen in the Kanto region. She has a child and has an egg in her stomach. Compared to the Uchiwa shrimp I've eaten in the past, the size was a little smaller, the flesh was leaner, and there wasn't much miso, but if you have children, the nutrients go to the eggs, so maybe it's due to the timing. The eggs have a chewy texture. I wanted to build up my stamina for my summer business trip, so I also ordered the beef Steak that was recommended on the daily menu that day. Taste typical of foreign red meat. At 790 yen for 200g, it is an exceptional cost performance. For a limited time only, one piece of bluefin tuna medium-fatty nigiri is available for 199 yen. It's pink in color with fine grains of fat and has a melt-in-your-mouth flavor. To finish off, I chose steamed clams with sake. Lake Shinji, which straddles Matsue City and Izumo City in Shimane Prefecture, is Japan's largest producer of Yamato freshwater clams. Cover the ceramic plate and steam it with sake, and when the solid fuel fire goes out, it's ready to eat. The cloudy white clam stock has a rich flavor. Recover from business trip fatigue with the power of amino acids.
