握りの実力
このお店はお客さんの接待で使うことが多いから、いつしかつまみ主体になっていたんだけど、最近あちこちでお寿司を食べる機会が多いので、たまにはここでもお寿司を食べてみようと思ってお任せで握りを頼んでみた。すると…すごく美味しくてびっくり。特に、握り具合が絶妙で、お寿司を口に入れるとシャリがいい感じに崩れてネタと絡み合う。
とり貝、ほっき貝などの貝類、シマアジ、ヒラメ、そしてまぐろ。どれを食べてもシャリの崩れ方が程よくて気持ちいい。クセになりそうな快感だ。
ここのマグロは南マグロなんだけど、脂の甘みが強めでクロマグロよりわかりやすい美味しさ。今回は特に中トロが美味しくて、もう一回食べたいと言ったらちょうど中トロがラストでお代わりできなかった。また来なくちゃ。
思い起こすと西草深の磯賢の時からの付き合いだけど、初めて親方のお寿司を食べた時にすごく美味しくて驚いたのを思い出した。だから、これからはおつまみでカラスミとか他にもう2、3種類食べたらすぐお寿司に移行しよう。その方が絶対に満足できる。
締めはいつもと同じ、シイタケと芽ネギで。

アメリカに永住することになった取引先さんの送別会。本人がお寿司食べたいというので佳賢を選んだ。担当になって初めて一緒に食事したのもここだった。なつかしい。最後はマグロ尽くし。おげんきで。おつまみの刺身はヒラメ、鰹、しめ鯖、白子、赤貝と鮑、烏賊のウニ乗せ…アメリカではなかなか食べられないのではないだろうか。そしてお寿司は静岡らしく、南マグロの握りいろいろ。赤身、中トロ、ヅケ、大トロの炙り、ネギトロ巻き。静岡を堪能してもらえたと思う。おもてなしのつもりが、自分も楽しんでた。親方、ご協力ありがとうございます。
