We use carefully selected dashi stock, which is the basis of our dishes. The shavings are made by a long-established shop in Hamamatsu that has been in operation for 200 years.The kelp is natural Rausu kelp, the soy sauce is purchased from one of the few soy sauce manufacturers in Kyoto, and the secret ingredient in the dashi is grilled flying fish from Kagoshima.Enjoy the aroma and flavor of the dashi. In addition, the soup stock for Ochazuke(boiled rice with tea)rice cooked in a clay pot is prepared to match the ingredients of the rice, such as sea bream soup, shrimp soup, and shellfish soup.

Kaiseki meals will be Yamabun's famous seasonal earthenware pot rice. Please enjoy the first cup as is, and the second cup with Ochazuke with Ochazuke(boiled rice with tea)made from Yamabun's carefully selected ingredients. Depending on the season, the contents of the clay pot rice change to include sea bream, blue goat, octopus, whitebait, clams, and salmon. The claypot rice in the photo is sakura shrimp. The soup stock for Ochazuke(boiled rice with tea)made with Sakura shrimp in a clay pot is shrimp stock.

All course meals come with sweets such as Yamabun's handmade pudding. The handmade pudding is made with Okinawan brown sugar made from Okinawan coral calcium.The eggs in the pudding are made with freshly laid Sakura eggs from Hamamatsu. Please enjoy the colorful sweetness with seasonal dishes.
