これほどのお店があるとはビックリ 東京から来る価値あるある 凄いですね。
まず今日のコースはアミューズからビックリ エルザフラワーです。これはボンボンゼリーです。最高でした。薔薇の葉が中に彩ります。中は液状でしっとり、、プチ シュワーといった感じ もう一つは日光のマスを使ったカナッペ ムースです。フィンガーでいただきます。
次は桜エビが入った洋風茶碗蒸しです。ブロッコリーのコーティングの下から濃厚な桜エビフランです。そして鶏の出汁がたっぷりと入っていてブロッコリーソースと口の中にとろけます。上には素揚げしたブロッコリーです。最高芸術ですね。次は栃木の旬野菜です。ハーブがとってもフレッシュです。暖かいソースは鶏のブイヨンと焦がしバターから取った美味しいブールノアセットというソースらしいです。最高の味わいでした。スナップエンドウも入っていてシャキシャキ感がすごいですね。お豆もアクセント添えます。ビーツも柔らかく美味しいですね。暖かいものと冷たいものがこんな絶妙にハーモナイズするなんて素晴らしいです。ハーブのオリーブも彩りを添えます。
パンも来ました♪胡麻風味のブリオッシュです。最高でした。自家製のパンで心がこもっています。最高でした。
そして次の前菜は美味しい帆立貝です。帆立貝のポワレです。下には春菊が入っている美味しいリゾットです。栃木の星というお米とモチキヌカという大麦のコンビネーションリゾットです。セロリと王林 つまりりんごが上に載っておりソースは上から濃厚なオマールエビソースがかかってます。とっても上品な味わいです。
そして二つ目のパンはコーングリッドの入った全粒粉のパンです。これも最高であります。
そして最初のメインはお魚です。ヤシオマスと独活です。これは最高でした。ミキューイです。ソースには甘夏などもはいっています。そして燻した香りが付いているマッシュポテトがアクセントを添えていました。最高であります。
そしてシャフが挨拶に来てくれました。息子さん2人とどんな思いでお店を経営しているかを聞いて味の深みを実感したのです。
さて次はメインふた皿目です。和牛と千瓢 さらに蕗のとうです。新ジャガイモの上には玉ねぎと干瓢が載っておりその上に玉ねぎのチップです。これは最高でした。アンチョビと蕗のとうをつけながらいただきます。最高でした。
そしてデザートはとちあいかです。これも最高でした。オーガニックバニラでブランマンジェです。周りがとちあいか です。栃木名産いちごです。そしてハイビスカスとローズヒップ それにライチのクリームが良いアクセントを添えます。ココナッツクリームも最高でした。そしてアイスは桜のアイスです。春を感じる逸品でした。
紅茶はカモミール そして抹茶マカロンとコーヒー味のお茶菓子 そして角砂糖っぽい小さなお茶菓子でした。どれも最高でした。接客も最高でした。
