ChefAbe Setsuo - Spreading Yamakawachi French cuisine from Shikoku to the world
Born in Tokushima Prefecture in 1954. He honed his skills at Restaurants in Osaka during the early days of French cuisine in Japan, and continued to study in Europe, particularly in Switzerland. In 1993, he opened "Chez Abe" in Anan Town. Seeking a natural environment and high-quality ingredients, he moved to an old house in Minami Town in 2001 and changed the name of the restaurant to "L'Atelier Abe." Reservations are required.
Food Innovative yet somehow nostalgic French cuisine
His specialty is fish consommé. The soup base is made with luxurious local fish such as grouper, grouper, and blackthroat seaperch. Instead of a salad, he serves "French-style Sushi" made with rice cooked in balsamic vinegar and bonito or mackerel Prosciutto. The concentrated soup is highly fragrant, and the sour garnish adds a playful accent to this masterpiece. This is the true essence of Abe-style French cuisine.
