He entered the world of cooking at the age of 18. He trained at many traditional Japanese restaurants, including Kitamura and Sekitei, and was appointed head chef at Kaiseki Ryori Aoyama. He then held various positions, including first head chef at XIV Hatsushima Club, executive chef at XIV Hamanako, and supervisor at Tsukiji Takewaka, before founding Ginza Kumasawa in 2010. His greatest joy and pride is hearing customers say "It's delicious" and "I'll come again." Please enjoy the cuisine of a craftsman who has dedicated his life to Japanese Japanese-style meal.
Food Returning to the customer's perspective: A dish that brings out the flavor of the ingredients
All ingredients are carefully selected by the owner. We purchase a variety of seasonal ingredients, including fresh fish from Toyosu Market, and serve them in a way that brings out the best in each ingredient's flavor. The owner himself tastes all the dishes and considers, "If I were a customer, would I be satisfied?", and only prepares those that he is satisfied with. The course menu also changes depending on the season. Please take your time to enjoy traditional Japanese Japanese-style meal, each dish carefully prepared.

We have a wide variety of drinks to enjoy with your meal. We have about seven types of sake on the list, including rare brands such as "Kitayuki Daiginjo YK35" and sake made by Noguchi Naohiko, the "god of sake brewing." We also have a selection of shochu by region that go well with Japanese-style meal. We also offer Japanese wines such as "Nomin Rosso" red from Tochigi and "Grace Koshu" white from Yamanashi. Please feel free to ask us if you would like some sake or shochu that is not listed on the menu.

We have counter seats, which are "premium seats" where you can chat with the chef and watch him prepare his dishes right before your eyes, as well as table seats ideal for multiple people.
