銀座7丁目にひっそり佇む「牛屋 銀兵衛」。
世界へ和牛の魅力を広めたパイオニア的存在の「神戸牛」。
「神戸肉流通推進協議会」の定めた厳しい基準を満たした本物の神戸牛をここ銀座で味わい尽くすことができる。
焼きは店員さんにお任せするか、自分で焼くかの選択もできる。
プロに任せた方が良いと思い、焼きは全てお任せした。
また、ワインの取り揃えも充実しておりソムリエ厳選のワインと合わせて頂けるのでデートや接待でも頼もしい。
前菜盛合わせ
4種類の前菜を頂く。
どれも上品でいながらも個性派揃いで食べていて楽しい。
銀兵衛の塩サラダ
シャキシャキ野菜とジューシーなローストビーフが印象的。
極みタン塩
牛タンの根元にあたる "タン元"。少しレアな状態で頂く。
程よい噛み応えと口に溢れる淡い脂が心地よい。
本日の希少部位（ハラミ）
これまた笑顔がこぼれる柔らかさと肉汁。
タレが円やかで脂に寄り添う甘さがマッチする。
神戸牛絹ロース
銀兵衛名物の「絹ロース」、 インスタ映え間違いなしの逸品。
芸術的なサシが入り、網の上でさっと炙り頬張ればそこは天国。
本日のスープ・肉寿司
黒毛和牛とポルチーニ茸から出汁を取ったスープ。
ここまでの旅路を労わる滋味が素晴らしい。
この日の肉寿司は「いちぼ」。
肉の旨みとシャリの酸味が良い、握りもふわりと握られている。
さすが銀兵衛、抜かりなし。
神戸牛赤身1種（トモサンカク） 霜降り1種塩（ランプ）
この日の赤身はトモサンカク、塩はランプ。ランプは旨味と塩味を持つ塩昆布と共に頂いた。
ランプの肉の旨味に昆布の旨味が合わさればまさに鬼に金棒。
箸休め
季節のフルーツで小休憩。
神戸牛ヘレ
この日の頂点ともいうべき「ヘレ」が登場。
ここまでのお肉達に感動されっぱなしだったがここに来てさらにギアが上がった。
肉の滋味と脂の旨味が最高潮。これを食わずして神戸牛を食べたとは言い切れない。
神戸牛特選霜降り部位（すき焼き）
〆の前のすき焼きは卵黄と絡めて頂く。
卵黄の妖艶な甘みと霜降りの甘味が絡まり合う。
和牛出汁茶漬け
〆は和牛だし茶漬け。三つ葉の爽やかさが効いたあっさりほっとする〆。
本日のデザート
最後は黒蜜ときなこのかき氷。やはり焼肉の〆は和のスイーツに限る。
