銀座でもフレンチの最高峰の一角を担う言わずとしれた名店。
金額的にもそれなりになるが、何よりもおすすめなのが肩ひじを張らなくていいということ。
総支配人の若林さんが、時折席を回ってお料理の説明をしてくれたりするのだが、その話し方がザクッとしていて、ついこちらもザクッと受け答えしてしまうと、それに笑いながら応えてくれる。
ソムリエの方の中には緊張されていたのか、鹿肉を和牛と説明し始めた方もいたり（きっと先月は和牛だったのだろう）、それもなんだか背伸びしなくていい感じがにじみ出ていていい。
ハレの日もにこやかに楽しめるというもの。
お料理はと言えば、エスキスの料理は一皿一皿コテコテの油絵のような料理ではなく、スケッチのようなさりげないものが並ぶ。
これがまた、あまりにも心地良い。
緊張感を感じずに最高峰のフレンチを味わい尽くすことができる。
エスキスのエグゼクティブシェフ、リオネル氏が目指す料理と総支配人、若林氏の目指しているお店づくりをぜひ体験してほしい。
