ホワイトデーに妻とエスキスさんを訪問。ランチコースにドリンクのペアリングでオーダーしました。シャンパンで乾杯した後、お料理が始まります。アスパラガスとウニのジュレ、羊チーズとエンドウ豆に鱒の卵、烏賊と蕪、の3品はどれも独創性があり見た目もアートな感じ。味もとても美味しい。その後の焼き筍も歯触りがよく優しいお味。お魚メインの金目鯛も出汁が活きていて美味しい。お肉メインの鳩はレアな焼き加減で柔らかく旨味があり甘酸っぱいソースもよく合っている。各料理にペアリングされたドリンクも料理を引き立たせる創意工夫がされていて申し分のないものでした。デザート2品も繊細で優しいお味。和の素材を活かした身体が癒される唯一無二のフレンチを堪能させていただきました。帰宅後、お土産のお菓子も美味しく頂きました。また訪問させて頂きます。
