銀座の味を一度知りたくてまいりました。
お金の関係もあるので、お得なランチを選びました。
ランチを予約しました。昼は11時からになっています。
店に入るときは自動ドアになります。ドアが開くと店員さんはまるで反射条件のようにすぐ迎えてくれます。さすが銀座の高級鮨屋さんですね。従業員のサービスレベルは結構高く感じます。
店内に入ると綺麗なカウンターが目の前に見えてきます。席に着くと、カウンターの高さ、椅子の高さはちょうど良い感じ。
店員さんの話によりますと、それは新しく替えたカウンターであり、しかもカウンターを作ってくれたのも有名な職人です。
高級感を追求するために細かいところまでこだわっているように感じます。
10貫五千円のコースでした。店に入る前に高く感じますが、食材の由来、味がわかれば、それは納得できると思います。
板前さんの話によりますと、食材の一部分は北海道から直送になっているようです。東京の築地市場にも出回っていない食材もあるみたい。
板前さんの話し方、鮨技術は凄いです。板前さんが握った鮨には空気感が感じられて、手前の備前焼きに載せられると動きます。また、お店の雰囲気は凄く和やかで、楽しいです。
ホールスッタフのサービスもとてもいいと思います。鮨に似合う酒、ビールなどもとても自然で良い感じで進めてくれます。
初めての高級鮨屋ですが、店に出る時に、本物の味を味わうことができたことにとても幸せだと感じました。
今度は夜のコースを予約して楽しく贅沢な時間を過ごして行きたいと思います。お金を貯めてからね。(笑)
