六本木のよし澤さんには何度も行ったことがあるんですが、
銀座にあるよし澤さんには、行く機会を逃してしまい、いまだに未訪。
日本料理がいただきたくなり、1人で銀座のよし澤さんへ。
９９００円季節の会席コースをカウンターでいただきました。
個室も２つあるようです。こじんまりとしたカウンター。
最初のお酒の代わりに、梅酢ジュースを頂きスタート。
雪に見立てた演出の貝の飯蒸しにはレンコンも。
お事汁という野菜が入ったけんちん汁のようなお椀とクエと蓮根の揚げ物。
クリスマスツリーに見立てた白和えには、銀杏、帆立、蟹、むかごなどなど。
とても和も感じながら、日本の歴史と西洋の歴史の融合した料理たち。
次はもみじ鯛をつかったクリスマスグリーンをしたお椀。これも美味しい。
そして、よし澤といったら鰆の藁焼き。塩と山葵でいただきます。
いつも変わらぬ美味しさ。それから鰤大根。
墨で焼きたての鰤と煮た大根を合わせた料理でした。
汁も美味しい。そしてアグー豚のしゃぶしゃぶ。
〆のご飯は煮え花から３回にわけてでてきました。
やっぱり蒸らしたお米が一番好みだな～。
でも、その少しの時間での変化を感じられる喜び。
おこげも美味しい。お漬物もじゃこも味わいながら1人、
ちょっと早い和クリスマスを楽しみました。
