一般に関東では油揚げがのったそば·うどんを “きつね” 天かすがのると “たぬき” と呼びますが、大阪で “きつね” といえば、油揚げののったうどんを指し “たぬき” はそばのこと…
また、同じ関西でも京都では短冊切りした油揚げと九条ねぎの京風きつねうどんにあんかけをかけると “たぬき” になるそうです。
松屋東館の裏手にあるきつね庵は京都市伏見区出身の吉野正規さんが東京の人たちに京都のやさしい味わいのうどんを食べてほしいと始めたお店

京のきつねうどんごはんセット【ちりめん山椒】をお願いしました。
使用しているのは菜種油にこだわり手揚げした北野天満宮門前町の老舗豆腐店とようけ屋山本製のお揚げ
一説によれば、お揚げを刻むのは舞妓さんでも食べられるようにとの工夫だそう…
甘辛く炊いたお揚げが上品な出汁とあいまって最後の一滴まで飲み干せる美味しさ
細めのふんわりとしたうどんと相性がいいですね。
