ランチタイムに会食で利用しました。
銀座駅から歩いて数分のところにあるビルの地下にある高級寿司屋さんで、落ち着いた雰囲気が銀座らしさを演出しています。
今回個室で予約したので個室席へスムーズに案内していただけました。
先方のリクエストでお寿司屋さんをとのことでしたが、お寿司を食べる前から入店した時点でサービスの良さと雰囲気の良さからかなりの好印象でした。
コース開始と同時にとりあえず生ビールを注文して乾杯。
生ビールはプレミアムドラフトビア熟撰。
泡がきめ細かくて喉越しが良く、香りも良し。
ホタルイカとホタテの前菜から始まり、焼き物やお刺身、お寿司、茶碗蒸しやデザートなど各種テンポよく提供される内容で、ボリュームはそれなりにあり満足度が高めでした。
前菜も焼き魚も美味しかったですがやはりMVPはお寿司ですね。
赤身や金目鯛、エビやイカ、ホッキ貝など王道のお寿司から高級店ならではの希少なお寿司まで一通り握り寿司で楽しめます。
シャリはやや少なめで赤シャリで人肌の温かさ。
小丼として提供されたウニ然り、トロ系のお寿司然り、とろける食感がやみつきになります。
また、手巻き寿司は黒毛和牛とウニといくらが盛られており、こちらが今回のメインのようです。
贅沢の詰め合わせを手巻き寿司でいただく、なんともリッチな一品ですがこれが本当に美味しい。
黒毛和牛もウニも柔らかくとろけ、旨味が強く、余計な味付けはしていない。
従来の寿司に対して圧倒的な差を見せ付ける手巻き寿司で、恐らくこのレベルの手巻き寿司を食べたのは今までになかったかも…。
肉とウニ、いくらのトリオによる無限大に広がる旨味はしばらく忘れることはできなそうです…。
この価格帯でウニやトロ系がしっかり提供されるという点も高評価ポイントのひとつ。
少しマニアックですが、お皿のチョイスも秀逸で、写真や動画に収めたくなる程の芸術性がある魅せ方に一目惚れ。
料理、サービス、ドリンク、コストパフォーマンス、雰囲気のどれもハイランクなお寿司屋さんでした。
