銀座に料理も店主もぶっ飛んだお店があると誘われて訪問。
店主は、東麻布の日本料理店で14年働いていた方で、ジュニアオリンピックの強化選手だったり、大学でロケット工学を学んだりと、かなり異色の経歴を持ってる。
おまかせコース (3,500円）を頼んだ。
前菜として、レタスの半玉、新たまねぎドレッシングかけが出てきた。
テーブルの中央部分を空けろと言われ、待ってると青森産本マグロの骨付き中落ちが出てきた。
スプーンでこそぎながら、海苔、沢庵漬け、サメ軟骨を使った梅水晶などで巻いて食べる。
言えばお替わりも出せると言われた（笑）
舟盛りに4人分の天ぷらが出てきた。新玉ねぎ、マコモダケ、海老など。
次に、豊洲の仲卸から、かなり質の高い穴子が出てきた。
その後、再び天ぷらが出て、最後は、70度の油で1時間ほど低温でじっくり揚げ、最後に表面を強火の油で揚げたサツマイモが出てきた。
見た目は大目のカヌレに近く、開いて見ると蜜化していてとても美味しかった。
