東京は銀座にある鶏料理店、かしわさんです。
こちら比内地鶏を取り扱うお店となっております、「かしわ」・・・全国的にはなじみ無いようですが西日本地域では鶏肉（特にもも肉）の総称となっております。
今日はひょんなことから高級ランチ、鶏まぶしのコースをいただきました。
まずはサラダ、茶わん蒸し生うにのせ。茶碗蒸しは来店してから蒸したのかな、というほどのアツアツ＆なめらか。作り置きではこの食感は難しいのではないかと思いました。
続いての鶏まぶし。鉄瓶に入った鳥だしとたれ焼きの比内地鶏をのせたおひつ、卵黄＆薬味類の構成となっています。
なかなかに香ばしい鶏肉です、かみしめた時の香りが抜群ですね。下手をすると鶏油の焦げたにおいだけになるのですが肉の良い香りが楽しめます。
出汁は後半とろみが出るほどの濃厚さです、塩味は薄いのですが濃厚鶏白湯的なイメージです。
後半はわさび＋ネギ＋出汁で出汁茶漬けでいただきました。
いいランチが楽しめました。
