味への探求の結果「鮨は保存食」
歌舞伎座の隣の地下一階。
お忍びで使いたい隠れ家的雰囲気のあるお店です。
「とりあえずオススメでお願いします。」
初めてのお店ではそれで飲むのが定番。
日本酒に合わせて、お通し、刺身、握り、珍味などなど、大将のおまかせで色々出してくれました。
「お寿司は保存食」
というように、上手に熟成された魚がとにかくめちゃくちゃ美味い！
臭みなんか全くなく、それでも魚の味の深みが増しています。
更にシャリ。
この味、炊き方、握りの強さ、全てが熟成された魚とぴったり。
お酒も大将のこだわりがちらほら。
お酒も結構飲みましたが、銀座のお寿司でこの味ならお会計も満足。
とにかく一度行ってみてほしいです。

少人数での会食をと考えて思い浮かんだ東銀座の「學」さん。
大将のオススメコースをいただく。
刺身からの白身や青物。
焼きなども挟んでの赤身へ。
提供される品々の順番もとても良く、それに合わせてオススメのお酒（大将の地元、山梨のお酒が多い。）を猪口で。
流れるような職人ならではの所作を目の前で楽しみながら、少しずつお酒が回っていく気持ち良さ。
このまま地上に出たくなくなってくる蝉の様な気分で、とてもいい時間を過ごさせていただきました。
細かいことは言わずとも、ここがいいお店だということが伝わってくれたらそれでいいかなぁと思います。
