自粛ムードが濃厚な銀座界隈には、頑張って時短営業しているお寿司屋さんが目に付きます。こちらもその一つ。
歌舞伎座のすぐ横の路地にあるビルの地下１階で、こじんまりとしたお店には静謐な雰囲気が漂っています。白木のカウンターが目にまぶしい。
まさに銀座のお寿司屋さんという構えですが、ランチは手の届く価格帯のメニューがあります。
お昼にぎりとばらちらしが、どちらも税込み２２００円。お昼にぎりをいただきました。
先付けはヨモギナで作った豆腐でしょうか。上にちょこんとわさびを載せ、出汁のジュレがかかっています。ヨモギのわずかなにがみとわさびの辛味、出汁の甘みがほどよく混ざっていて、抜群。
握りのスタートはまこがれい。ほんの少し降ってある塩が甘みを引き出しています。たいらがい、こぶ締め、いわしと続きます。どれにも細かな包丁とスダチや塩などいくつもの手をかけています。
銚子の本まぐろの次は焼いたしいたけ。藁で燻したさくらますも香りがとてもいい。歯にからみつくような粘りのある玉子のあとが〆のかんぴょう巻とあおさ味噌汁。
どれも上等で、シャリが軽やか。平日のお昼なのに、ゆったりとご馳走を食べたような満足感がありました。
