朝食コースをいただきました。ランチにいただけるのも良いですね。
店内は清潔感と高級感が凄くてお盆も照明。
全席作っているところが見える劇場型でした。
大将の真ん前で手元を見ながらいただきました。なんとも贅沢！！
まずは梅酒風のソーダ割りで乾杯！スッキリしていて美味しい。
きのこと菊菜のかぼす浸し★
きのこは網で焼いて、春菊、菊、かぼすとあえています。きのこの旨味とかぼすの酸味が相性抜群。
無花果の酒蒸し 胡麻餡かけ★
いちじくはとろとろ。ごまあんはごまが優しく香り、出汁ジュレがキラキラ。
薪火焼きもどり鰹のなめろう★
薪のいい香り〜！
カツオはとても分厚くカット！ニンニク醬油、酢や茗荷、かいわれなどと和えてなめろう風に。
なんとも分厚くて贅沢！
ごはんの食べ比べ★
どちらも一合ずつ土鍋で炊いてくれます。
「愛国」は明治から食べられていた古代米。粒が小さくて硬めの食感。冷めると色が少し黄色くなり、より硬くなります。
現在古代米はお酒ようにしかほとんど作られておらず、かつ2年に一度しか作られないためとても貴重なお米なんです。
硬いお米が好きなのでこれはすごく気に入りました。
古代米の中でも白米は貴重であり、昔の人にとってはとんでもない贅沢だったと思うとしっかり噛み締めていただきました。
「合鴨農法つや姫」
は山形県産。粒が大きめで香りがとてもよいです！
島内啓次さんのアサクサ海苔★
ご飯に醬油を霧吹きでシュッとして海苔で巻きます。
日本一の玉子かけごはん★
卵はトリュフの香りがして、愛国にかけていただきます。愛国の硬さが卵かけご飯とマッチ！ごはんの量も完璧でした。
秋鮭の塩焼き エシレブールブランソース★
大根の鬼おろしと、なんとエシレバターを使った贅沢ソース。塩焼きの身はふっくら。ソースをかけると一気にフレンチになりました。
皮目はパリッとしていて美味しいー！！
黒毛和牛ロースの燻し鋤焼き★
とってもお肉は柔らかくて贅沢ー！ごはんと合いまくりでした。
燻りがっこ入り明太子、漬物、じゃこも全て美味しくてどれも完食。
滑子と京揚げのお味噌汁★
焼きねぎの香りがよく味噌が甘い！山椒がアクセントになっていました。
どれも美味しくてあっという間に2合近く完食していました。
珈琲ブランマンジエ★
色はミルク色なのにコーヒーの香りがすごい！チョコパフもかわいいアクセントです。
これで10,000円ちょい。ごはんの食べ比べがとてもよく、大満足の朝食コースでした。
