Chef[Sushi chef] Kenji Kadowaki
He began training at the age of 17 and learned the origins of Edomae sushi. When his master retired, he moved to the United States and met Masaharu Morimoto, the Iron Chef, and they still have a father-apprentice relationship at work. After returning to Japan, he has been featured in many media outlets as the executive chef of a certain food and beverage company, and has close friendships with celebrities. We have established our own procurement routes by personally visiting fishermen and wholesalers in Hakata, Tsushima, the Goto Islands, and other areas. In Arita, he met with a young ceramic artist, Takayuki Nishi, and asked him to create the tableware he would use. As a culmination, we open “Sushimonwaki” in Ginza.

Sushimonwaki is located on the 6th floor of a modern building in Ginza 7-chome. As you ascend the elevator and pass through the sliding doors into the store, you will be greeted by the soothing sound of tsukubai water. As you walk down the calm, dimly lit cobblestone alley, you will find yourself in a Sukiya-zukuri style store. Relax to your heart's content at the warm white cypress counter and enjoy the sushi time performed by the chefs right in front of you, as well as our wide selection of sake and wine.

The freshest ingredients are essential for the Edomae-style preparation, which is aged for a certain period of time to bring out the flavor. For this reason, we have developed our own routes, flying not only to the fishmongers in Toyosu that we have been doing business with for many years, but also all over Kyushu, Tsushima, and the Goto Islands. The ingredients are carefully selected by local brokers, processed by the ultimate blood removal expert, and then shipped directly to the store.
