The interior of the store is based on calm colors and has a modern feel while still retaining a classic feel. The space is made of glass and has an open feel. Popular cakes from the hotel's era will be revived, including the traditional cake ``Western Mont Blanc,'' which has been passed down over a quarter of a century since the hotel's founding, and the classic dessert ``Tiramisu,'' which was served at the Italian Cuisine Restaurants ``Atore.'' After graduating from culinary school, he joined Hotel Seiyo Ginza in 1993. After gaining the basics of cooking at a hotel for about 8 years, he worked at famous Restaurants such as "La Rochelle", "Ginza Restaurants", and "Château Restaurant Joel Robuchon", before returning to work at "Hotel Seiyo Ginza" in 2008 and working in the main dining room. Became a chef. After the hotel closed, he served as head chef at Restaurants in Tokyo. As one of the chefs who inherits the taste of Hotel Seiyo Ginza, he returned to Seiyo Ginza for the first time in 10 years to serve dishes.

``Menu Héritage'' reproduces popular menus selected from the hotel's more than 20 years of history. Menus including the main dining specialty ``Warm Homemade Smoked Salmon'' are served on plates from the hotel era. On the other hand, ``MenuCroissance'' offers monthly courses that actively incorporate ingredients from producers that you can see. We offer dishes with a new twist while preserving the traditions and flavors from the hotel days.
