この日は休日の土曜日。
例によって平日の出張続きで疲れているので、お昼頃まで爆睡…ランチはどこにも食べに行けず。
さて、夕飯は何を食べに行こうかなとBMを見ていたら、食べログさんから予約できるようになっていたとんかつ檍さん銀座4丁目店！
しかも本日空いている…行くっきゃない♪
こちらのお店は、とんかつ檍さんの旗艦店とも言えるお店とのこと、ぴーたんたんさんのレビューで存在を知りました！
カレー業態のいっぺこっぺさんを含めて、コロナ明けからもの凄いスピードで出店されていますね、大したものです！
場所は銀座松屋通り沿いの、アイスクリームのヴェンキさんが入っているビルの5階になります。
エレベーターがある入口付近の置き型の看板が目印です。
予約時間の少し早くに伺うも、すんなり入店できました。
旗艦店とは言え、此処は銀座、そんなに広くはありません。
でも、オープンキッチンで目の前で仕事が見れるのは嬉しいですね。
カウンター席に案内され、メニューを拝見。
本日のブランド豚は、TOKYO-Xとマンガリッツァ豚。
マンガリッツァ豚の特選ロース200gにアラカルトの牡蠣フライ2個をお願いしました！
目の前で作業されている所を見ていると、作業一つ一つの動作がとても丁寧で素晴らしい。
とんかつ屋さんはかくあるべしなお手本のよう。
この前伺ったとんかつ蒼樹さんも素晴らしかった。
20分掛からないくらいで牡蠣フライ、とんかつの着皿です。
まずは牡蠣フライ！
2個で¥1,000となかなかのお値段ですが、一切文句ない代物。
パン粉が立っているくらいザクザクの衣に、中にはトロトロの牡蠣。
これにたっぷりタルタルソースを乗せて…口福。
銀座店の牡蠣フライも最高ですがさらに上をいく美味しさ、揚げ方がほんと素晴らしいです！
そしてマンガリッツァ豚の特選ロースかつ！
脂身の分厚さに驚きます…。
まずは、お塩で。
脂、甘んまいっ！
融点が低いのでしょう、スーっと溶けていきます。
この脂には茎わさびと醤油の組み合わせが最高に合います♪
赤身の部分はとんかつ檍さんのフルーティな甘めのソースが最高っ！
ご飯の炊き具合も文句なく、しじみの赤出汁も美味しかったです。
あっという間にペロリ。
とんかつ檍さんの旗艦店と言うだけあって、とんかつ檍さんの最高峰がいただけますね。
また是非伺いたいと思います。
