This time, the project went well, so I had a dinner with business partners that also served as the launch event. Since I had some business to talk about, I chose this Restaurants because it was quiet and had a nice atmosphere. Although it was a Monday, the seats were filled and everyone was quietly enjoying their food and wine. Since it was a celebration, we chose the chef's recommended course: Carpaccio of scallops and sweet shrimp.The sauce was cauliflower and yuzu. The sweet shrimp had a good texture and a deep sweetness that went well with the sauce. Homemade Pasta Tonnarelli with Red King Crab and Boiled Green Onions The sauce is roasted turnips that concentrate the sweetness, and the red king crab stands out. Rich Risotto with Carnaroli Rice and Parmigiano Cheese Black Truffle Carnaroli rice has a slightly firm texture, but it is easy to season and is the perfect variety for risotto. The rich flavor of Parmesan was well absorbed. It was also served with black truffles, so it was delicious as well as fragrant. Sauteed eel caramelized with red wine and balsamic vinegar I only have experience with Kanto-style eel dishes, so the texture of the sauté was new. The balsamic vinegar really brought out the fatty taste of the eel, and it went well with the wine. Palate cleansing sorbet Sautéed Japanese black beef fillet with arugula and almond paste I could feel the bitterness of the arugula, but perhaps that's why the fillet had a light taste. I had eaten a fair amount so far, but this one was also light and delicious. For dessert, I chose pistachio cake and another item.The food, atmosphere, and hospitality were great.
