本日お昼にやってきたのは日比谷にある「麴蔵」という居酒屋のランチ
ジャンルは“奄美・薩摩、沖縄料理”と名乗っていて、別に提携をしているわけではないのだろうけれど、お店は私もたまに訪れる鹿児島のアンテナショップ「かごしま遊楽館」が入ったビルの地下にあります
こちらのお店も見るからに飲食資本の匂いがするのでちょいと調べてみたところ…

こちら、昨年の夏にストライクゾーンの低めギリギリを厳しく突いてくるシビアなコントロールを見せつけられた小伝馬町の「馬舌屋」と同じ資本の一味でしたか

そうとわかってしまうと途端にテンションも期待値も下がってしまいますが、とりあえず一度は入ってみることにしましょう
それにしても…
チェーン居酒屋でご当地料理というと、昭和から平成初期にかけてのその昔は北海道一辺倒で、あとはご当地不明の田舎(風)料理ばかりだったという記憶があるけれど、九州料理なんていうものを扱っているのをよく見かけるようになったのは、九州産を中心とした本格焼酎が首都圏でも市民権を得るようになったここ20年くらいのことじゃなかったかな
そんなことを思いながら階段で地下に降りて入ってみれば、それなりに造りこまれた感じがある店内
案内された席に着いて卓上にあるメニューを検めた私は「鹿児島黒豚炭火焼き丼(1,000円)」を「豚汁変更(180円)」でオーダーしました
で、ややあってやってきた「鹿児島黒豚炭火焼き丼・豚汁変更」
見れば、肉の厚みや、肉の量とごはんのバランスに飲食資本の精密にしてシビアなコストコントロールを感じないでもないけれど、これはこれで美味しくいただけます
一方、豚汁には七味を振っていただきましたが、こちらはなかなか具沢山
そういえば、九州料理というのだから使っているのは麦味噌なのかな
まあ、こちら、九州の資本ではないのだろうから、さすがにそこまでこだわってはいないのかもしれないけれど、いずれにしても名古屋の赤味噌を使った豚汁と比べると、抵抗なくいただけます
総じていえば、さすがに魚料理ほどはっきりはしていないけれど、こういう料理でも飲食資本系のコストコントロールは見事にシビアだな
