今回は新橋駅と銀座駅のちょうど中間に位置する天ぷら百名店「天亭」さんを訪問。
予約可とのことでしたので事前に電話予約の上で来店、ランチメニュートップの天丼を注文。
開店タイミングでは私一人ではありましたが、上品で落ち着いた静寂な空間の中、カウンター席で揚げ上がりを待ちます。

注文して十数分の後に配膳された天丼はぱっと見は地味なのですが味は格別。
海老、キス、舞茸、アスパラ等の具材は仕込みが優れているのか揚げが優れているのか具材の良さを保ったまま天ぷらとして仕上げている印象。アスパラも鮮度が感じられる不思議。
胡麻油で揚げているという衣は辛くはないのですがスパイシーで記憶に残る風味。お米も炊きあがりよし、タレも絶妙なバランス。天ぷらの下に隠されている薫るすだちの皮もポイントです。
赤出汁のしじみの味噌汁も良いだしが出ていてこれも旨し。
おそらく、ある程度のお値段の為、特に混雑していないのだと思いますが自分としては穴場(とはいえ百名店ですが)としてまた利用したいと思える納得の味でした。
夜も来てみたいです。
