世界中の肉料理を食べ歩いている和地徹シェフのマルディ・グラへ
ジャンルとしてはフレンチに属するが、和地さん料理というカテゴリーではないだろうか。世界の秘境の肉料理を食べ尽くしてきた人だからこそ素材としての肉に対しての様々なアプローチが面白い。
独創的と言うか、大陸の味が散りばめられている感じがする。
テレビで見る和地さんの特集で出てくる豪快さはなく、銀座つもぽい仕上がりになってるので、もう少し豪快さが欲しいところ。
ハンバーグをカットするのは一緒に行ったミシュランシェフに任せた。
