新橋のど真ん中、烏森神社を少し南に下がったところTVのCMでお馴染みの「玄品ふぐ」。
ちょっと立ち寄ってみた。
ここの店は小さいながらも2フロアあり2Fへ案内された。
「てっちり」と「てっさ」を注文、付き出しに皮の湯引きが付くのでとりえず、ビールで乾杯。
IHヒータが各テーブルに設置されており、かごに入れた紙が鍋になっている。
ダシを入れて、まずはアラから入れるとのこと。
コリコリ歯ごたえのあるてっさは薄いものの皿の柄がくっきり見えるほどではなく、少し厚めと感じる。
食べ応えもある。
てっちりもお値段だけに全体的に上品に少な目。
さっと鍋に通して食べるぷりぷりの皮はとろりとしたゼラチン質でうまい。
ひれ酒もぱっと火をつけて香ばしさを出してくれる。
シメは雑炊で。ご飯は冷水でぬめりを取ってくれているが、いかんせん鍋が紙なので、仕上げに蒸らすことが出来ないのが残念かな。
手頃な価格で味わえるふぐでした。
