汐留にある日テレタワーにあるイタリアン「Buco di Muro 日テレプラザ店 （ブコディムーロ）」
1953年創業の和風パスタ発祥の壁の穴が手掛けるトラットリア。アンティパストから、石窯で香ばしく焼き上げるピッツァ、肉・魚料理のセコンドピアットまで提供しています。

Aランチ、本日のパスタ3種から"スモークサーモンと夏野菜の冷製パスタ"、オプションで「本日の前菜盛り合わせ」、「ドリンク」を付けます。
冷製パスタは、日本独特のメニューで「イタリアにはないからつくらない」というポリシーのシェフもいますが、（この間のシェフはそう言っていらした）さすがに最近は本場のレストランでも採用されているようです。
【前菜】
「サラダ」
レタスなどの葉物サラダ。ドレッシングが良く馴染ませてありました。
【本日の前菜盛り合わせ】
「スパッラ・コッタ・ディ・サンセコンド」
伝統的なパルマのハム。豚の肩前部から骨抜きした後、調味し数時間かけて加熱。ローストポークより味わい深く、柔らかくスモークの香り豊か。パルマ生まれの作曲家ヴェルディの好物であったそうです。
「カポナータ」
とろけるほど煮込まれた野菜は、うまみたっぷり。
「イワシのマリネ」
脂がのったイワシは、酸味をまろやかにして締めてあります。もっと食べたいくらい美味しかったです。
【プリモ・ピアット】
「スモークサーモンと夏野菜の冷製パスタ」
香り豊かなスモークサーモンにパプリカ、フルーツトマトの旨味を合わせた色鮮やかな冷製カッペリーニ。しっかりニンニクの鮮烈な風味を移し乳化させたソースを、つるっとしてコシのあるパスタに絡め、トマトの酸味が爽やかなアクセントに。
【ドリンク】
「アイステイ」
デザートを食べようかと思いましたが、かなり満腹になりあきらめました。前菜の作りが丁寧なことや、冷製パスタにおいては味がぼけやすくなりがちですが、下味もしっかりで好みでした。高級店に行っても、味が複雑すぎて、余計な味付けしなくてもいいのに、と思うこともありますからね。他の料理も食べにまた行きたいと思います。
