2019年6月にオープンした鉄板焼き店にランチにお伺いしました。場所は銀座8丁目、外堀通りの1本東側の通り沿い「コルティーレ銀座4ビル」の地下1階。名古屋に3店舗ある鉄板焼き店が銀座に進出とのこと。コロナの影響による休業開けランチ営業を開始されました。
程よく高級感のある落ち着いたカウンター席、個室（鉄板カウンター設置）も拝見させていただきましたが、シャンデリアなどもあり銀座らしいゴージャスな雰囲気です。
ランチは¥4,000からありますが、本日は・黒毛和牛フィレステーキランチA ¥9,000（サ別10%, w/o tax）をお願いしました。
・タコの柔らか煮、冬瓜
味もよく染みた、本当に柔らかいタコ、冬瓜が美味しい夏がやってきました。
・じゃがいもの冷製スープ
中に入ったコンソメジュレが涼しげな暑い日に嬉しい、爽やかなお味のスープ。
・スズキ、ズッキーニ、アスパラガス
夏が旬のスズキは爽やかなクリームソースで。こんがりした皮部分も美味しい。
・自家農園野菜のサラダ
ユズ味噌ドレッシング、パルメザンチーズ。とても新鮮です。
・黒毛和牛フィレステーキ80g
神戸牛メインのお店なのですが、今日は飛騨牛のヒレ肉。レンコン、ナス、ニンニクチップももの凄く美味しそうです。ほんのり赤身のある断面。歯がなくても食べられる柔らかさで、甘みも十分です。最高。お肉は塩ワサビで、野菜は飛騨のたまり醤油と、もろみを使った自家製薬味が絶品で、もろみの薬味はそれだけでお酒のアテにも良さそうです。
・ガーリックライス +¥500
とろろ昆布の赤出汁付き。ガーリックライスも特徴があって柴漬けヒジキと一緒に調理されています。柴漬けの酸味が軽やかな和風で、とても美味しいご飯でした。
・自家製オレンジシャーベット、シャインマスカット
最後は爽やかなデザートで。そして一緒に出していただた美味しそうな緑の粒はブレスケアでした。心遣いがとても嬉しいです。
暑い夏、牛肉やニンニクはとても元気が出ます。鉄板焼きの魅力の1つはシェフとお話しながら目の前で調理していただけることだと思うのですが、担当していただいた山内シェフは手際の良さはもちろん、お話も興味深く、楽しいランチタイムを過ごさせていただきました。ごちそうさまでした！
