Last month, I missed out on Hiroshimayaki when I was in the Shinbashi area, so I went to this place on the 4th floor along Ginza Corridor Street for 1,700 yen in a flash.The 4th floor of the building is directly inside the building via elevator, and although it is an Okonomiyaki restaurant, it is very nice. It has a fashionable interior and is designed to accommodate a variety of situations, with private booth seating, counter seating where you can enjoy live performances, and bar counter space. It was great to be able to sit at the teppanyaki live counter seat and watch the master's Teppan-yaki skills! First, a thin flour batter is baked, then the batter is placed on top of cabbage or squid tempura and steamed.What I found interesting was that Osaka's Okonomiyaki is stirred in a cup to incorporate air before being placed on a griddle. I feel like most people don't touch the cabbage carefully once it's set, but here there is a process where they stir the cabbage at lightning speed to mix it with the ingredients. I also added shredded green perilla to create a layer. This time I chose udon noodles, which are quite tall. After that, spread it thinly like a fluffy Crepes with two eggs and then add the ingredients from earlier! Then, place it on a drawstring bag and flip it over to create a delicious-looking film that looks like a big piece of meat! Sprinkle with plenty of green onions and serve! There is a sweet layer of cabbage and pork, the refreshing flavor of green perilla lies in the middle, and the bottom layer is udon fried with oyafuku sauce, making it a trio of flavors ^_^ There's no way it's not delicious!
