・大間産なまこ酢
→唯一無二の食感
・氷見産メジマグロ(本鮪の子ども)
→薬味たっぷり乗せて。たたきの香ばしさと、薬味のピリッとした辛さ。肉質が柔らかい。脂のりもほどよい。
・江戸前たちうおフライ
→大葉があじがしまる。さくさくうすごろもとふわふわの肉質。マグロとの味わいの差がすごい。コントラストがあって素晴らしい。
・佐賀県産ホワイトアスパラガスのすりながしを載せた茶碗蒸し
→ここでも唯一無二の食感。アスパラのうまみすごい。青臭さが全くなくてまろやか
・愛知県一色産うなぎの付け焼き わさびと浜名湖の生のり
→切ってる時の「ザンッ」という音が素敵。香りがよい。かんでも凄い音。ざくざく。それでいて中がふわとろ。とろける。脂すごい。

→港区で作られた日本酒。23区唯一
・北海道余市あん肝
→クラッカーと合わせるのが予想外だけどめちゃくちゃあった。鯉の煮付けの内蔵系に似てる

→めちゃくちゃ水が抜けてて、しっかりしてる。うまみ強し。
・いわし
→とける
・かすご(春子)(稚鯛の幼魚、皮が柔らかくて春がおすすめ)
→ゆず風味。ちょっと火が通ってるような食感、酢締め？
・ノドクロ
→割った時のあぶらの溢れ具合。うんま。

→安定の美味しさ

→あん肝とのペアリングすごい。甘さを増すような。うまみ。自分は主張せず後押ししてくれる感じ

→辛さは抑えめで華やかだけどうまい

右手はなにくる手前の辛さ。うまい

→歯切れが良くて、さっくり。包丁入れない方が良い。3日くらい寝かすことで、細胞壊れてしっとりする。最初はパキパキらしい。

→シャリの温度がすごい、ちょうど溶ける
・小肌
→ぷりっとしてる

→これまで食べたウニで一番うまいかも。ウニの温度は冷ためなのに甘みがぐっとくる。
