次男が企画して久しぶりに家族四人揃っての食事会。
丸の内は東京メトロ大手町駅とJR東京駅に近接し、それぞれ一人暮らしの二人の息子にも私たち夫婦にも乗り換えなしで集まれる場所です。今回は丸ビル36階のこちらでランチをいただきました。
窓際の4人用テーブル席からは雨に霞んで東京湾に架かるレインボーブリッジや超高層ビルに囲まれた東京タワーが見えます。
今回予約していたのはシェフズ・スペシャル・ランチ。アミューズで始まり、サラダ、スープ、魚料理、肉料理と続き、デザートとコーヒーor紅茶で終わります。
「クール・ド・ブッフ夏野菜のサラダ仕立て」は、細かく刻まれたトマト、パプリカ、玉ねぎとベビーリーフの下にグリルした牛の心臓が隠され、上からはペコリーノチーズがまぶされています。コリアンダー=パクチーの個性的な香りが上手く使われてました。
スープは「帆立貝クレーム・ド・マイス」。見たことのないような大きな帆立貝は焼き目が付くようにソテーされ、その上に雲丹が。それらを浮かべるのは今が旬のトウモロコシの冷製スープ。トウモロコシの甘さが帆立貝の甘味と見事にマリアージュ。
魚料理は、鯛のグリル。素揚げの牛蒡とトマトベースのしっかりと味付けされたソースが添えられていました。グリルされた対はふっくら。味は淡白なのでしっかり味のソースがベストマッチでした。
肉料理は特選和牛のステーキ。今回使われたのは鹿児島産のものだそうです。きめ細かなサシが入った高品質な肉はレアに仕上げられ、口に含めば肉汁がジワーと広がりました。家族四人で感動してしまいました。
デザートは、シャーベットとココナッツのフィナンシェ？。私のプレートにはチョコレートでメツッセージが書かれていました。
最初から最後まで全ての料理がスペシャルな美味しさでした。記憶に残る食事会となりました。
