お客様からの誕生日祝いで初訪問させて頂きました。
場所は東京駅の目の前の東京ミッドタウン八重洲の中にあるブルガリホテル40階にあります。
こちらは福岡のミシュラン三つ星店の鮨行天さんの監修とのことです。
エレベーターを降りると豪華絢爛なエントランスがあり雰囲気は素晴らしいですね。フロアにはあまり目印がないので少しお店の位置は分かりにくい感じです。
店内に入ると高い天井に緊張感が高まりますが間隔にも余裕があって居心地は良いですね。
カウンターには剃毛の握り手さんと若い脇板さんの2人体制でテキパキした爽やかな方達なので緊張はすぐにほぐれました。脇板さんが鮨行天さながらの目の前で舎利を切るパフォーマンスから始まります。店内にはお酢の香りが漂います。そして、まずは岩海蘊、茶碗蒸しを頂き早速、やま幸は厚岸の延縄の鮪の砂ずり2貫からのスタートです。お酢が立っているからこそ握りの一番バッターですね。
その後はお任せの日本酒を頂きながら握りの間に適度な摘みを頂きながら職人さんとの会話も弾みました。
最後に辛口の意見なりますがまだ改良の余地と伸び代を感じつつ店を後にしました。ご馳走様でした！
