「鯛茶と筍が食べたいです」
とリクエスト。粋な黒い壁に格子戸。飛石を伝って入口へ。檜白木のカウンター席に案内されます。前の御店以りも、スッキリ明るく成りました。溜乱筋の折敷に先細の杉箸と木匙。煎茶。
キン／＼に冷えた打出銅錫引の喇叭型タンブラーで、マスターズドリーム。銅鍋や銅製フライパンの錫が剝げたのを使い続けて銅中毒を発症した既往が有るので、一寸神経質に成ってます。
・前菜 孟宗竹筍木芽焼
・揚物 琵琶湖小鮎天麩羅
・蒸物 尼鯛桜蒸 赤尼鯛を道明寺粉で桜餅に。
・八寸 筍と鞘巻海老の木芽和 鯛子炊 蛍烏賊沖漬 桜鱒笹寿司 白魚天麩羅唐墨粉掛 蝦夷梅貝旨煮 菜花芥子和 穴子八幡巻 八寸盆に桜華添です。
・御椀 玉子豆腐 鳥貝 筍 茗荷 木芽 利尻昆布と鮪節で引いた上品な出汁を、塩と淡口醤油で薄味に調えてます。
・向付 鮃昆布締 墨烏賊 酢橘 紅蓼 藻塩 山葵 溜醤油
・焼物 太刀魚塩焼 薑 酢橘 染卸
・煮物 若竹煮 糸掻 木芽
・台物 鰻蒲焼 花山椒 三河鰻です。
・御飯 鯛茶漬 桜鯛削切 4枚 三葉 御湯霰 山葵 梅干と当胡麻に酒と味醂と濃口醤油の垂 固炊の御飯 スペシャルテです。小盛で御願いします。萩の抹茶碗です。先ずは其儘頂きます。梅の酸味が快いです。半場に成ったら、鰹出汁と緑茶に塩と淡口醤油で調味した出汁茶を回掛けて、完食です。満足です。

・甘味 2 薩摩藷餡とバニラアイスクリームの最中

御馳走様でした。御腹が一杯です。今度は鮑会席を頂きに伺いますね。
