この日は馬喰横山にある『ラ ブーシュリー グートン』に伺いました。
こちらのお店は美味しい豚肉を食べられるお店で以前から気になっていました。
ミシュラン ビブグルマンにも4年連続で掲載されているそうです。
土曜日の18:00に予約して伺ったのですが、あっという間にほぼ満席になりました。
やはり人気店なのですね。
テーブル席に着席すると、豚の置物がありました。
周りを見渡してみるとテーブルごとに違う豚の置物が置かれていて可愛いですね。
まずはスパークリングワインで乾杯です。
事前にお願いしていた「グートン コース（5,500円）」がスタートです。
■アミューズとパン
ビーツのスープです。
ベーコンと茹でた落花生、つるむらさきが入っています。
落花生の香りが良くて美味しいですね。つるむらさきの食感も面白いですし、ベーコンの旨味と塩味がスープの美味しさを引き立てます。
パンも香りが良く、外はカリカリに、中はモチモチに焼かれていて美味しいです。
ここで白ワインに切り替えます。
■シャルキュトリ盛り合わせ
豚の血のパテ、パテドカンパーニュ、すね肉の煮凝り、ホルモンのパテと盛りだくさんです！
豚の血のパテは温かくてフワフワでクセもなくパンと一緒に食べると香ばしい香りとマッチして美味しいです。
マスタードソースがパテに非常に合いますね。
パテドカンパーニュにつけてと説明がありましたが、どのパテにつけてもアクセントになり美味しかったです。
トマトも湯剥きされており手が込んでいます。お野菜もたっぷりなのが嬉しいですね。
■本日の豚 炭火焼き
これは本当に旨かったです！
赤身は香りが良く柔らかくジューシーで、脂身も甘くてまったく嫌な感じがしません。
LYB豚という絶滅しかけた豚なのだそうです。
ボリュームもたっぷりで「美味しい豚肉をたっぷり食べた！」という印象がしっかりと食後に残りますね。
焼き野菜も1つ1つ味わい深くて美味しいです。
特にじゃがいも、カボチャと赤ワイン（ジゴンタス）を合わせるとサツマイモのように甘みと香りが広がりました。
■自家製デザート
自家製のバニラアイスに梨のコンポートです。
こちらもしっかりボリュームがありデザートで締まりました。
■コーヒーor紅茶
ホットコーヒーを飲みながらコースの振り返りゆっくり寛ぎました。
お料理の美味しさとたっぷりのボリュームに大満足のコースでした！
おすすめしていただいたグラスワインともぴったりで非常に美味しかったです。ごちそうさまでした。
